Bovinmarche fa scuola… di gusto!
“Anteriore: povero ma buono” giovedì a Senigallia il corso sulla carne marchigiana promosso dalla Federazione Nazionale Cuochi di Ancona in collaborazione con l’Associazione Italiana Macellerie Artigiane e Bovinmarche
Senigallia (AN, Marche) – È in programma giovedì 24 gennaio, per l’intera giornata, nell’aula didattica dell’IIS Panzini di Senigallia, il corso “Anteriore, povero ma buono”, guidato da Fabrizio Gasparrini (macelleria Da Samorina, Loreto) socio AIMA e membro dello staff tecnico della Nazionale Italiana Macellai. Il corso, aperto a professionisti e allievi, è rivolto a coloro che vogliono saperne un po’ di più su cosa mangiano e come vengono preparati i piatti della tradizione marchigiana.
A promuoverlo è la Federazione Nazionale Cuochi Sezione di Ancona in collaborazione con l’Associazione Italiana Macellerie Artigiane e Bovinmarche, cooperativa di allevatori marchigiani, che metterà a disposizione la materia prima, certificata e di ottima qualità, con cui si cimenteranno gli iscritti alla giornata di formazione.
“L’appuntamento – ha sottolineato Domenico Romanini, presidente Bovinmarche – si inserisce nell’attiva di formazione e informazione che caratterizza la nostra cooperativa nata per identificare la carne di qualità delle Marche e per insegnare a riconoscerla e utilizzarla al meglio. Il modo migliore per valorizzare le caratteristiche uniche di questa grande razza bovina”.
La carne Bovinmarche proviene infatti, esclusivamente, da capi bovini allevati nelle colline marchigiane secondo i tempi e i modi previsti dal disciplinare. I prodotti Bovinmarche “hanno una tracciabilità completa – ricorda Romanini –, questo consente al consumatore, alla macelleria che li propone e agli chef che li lavorano, di avere tutte le informazioni relative alla carne scelta: una vera e propria carta d’identità del bovino”.
Dalle ore 9 alle 12 si svolgeranno le lezioni dedicate agli allievi (costo 35€); dalle ore 14.30 alle 18 quelle dedicate ai professionisti (costo 60€).
